We waited longer than usual for Pancake Day 2022.
Now it’s finally upon us, you may be thinking about how you’re going to top your pancakes – as well as grease your frying pan and perfect your flipping technique.
So NationalWorld has put together some ideas on how you can go beyond lemon and sugar and be more adventurous with your pancake toppings.
1. Lemon watering
Yes, it’s basically lemon and sugar – but it’s very different from your traditional pancake filling.
The difference comes from looking for lemonade rather than lemon juice.
Premium soft drink brand Fentimans recommends creating a sauce using its Victorian lemonade.
It even says you can put 190ml in your batter mix to add spice to your pancakes – although that might be a step too far for many people.
To create the topping sauce, combine 100 g of icing sugar with 100 ml of lemonade and mix gently.
2. Be fruity
If citrus zest is a bit too traditional for you, why not dive into the fruit aisle of your local supermarket?
Blueberries and strawberries are a conventional combination, but you can turn them into something even more exciting with the addition of black currants or currants and prunes which will add flavor notes up and down the fruity mix.
And if you want to get more out of your 5 pancakes a day, you can replace the flour and milk in your standard batter recipe with banana.
You will need one large banana for every four pancakes you make.
Start by mashing the fruit into a purée, incorporating two beaten eggs, a pinch of baking powder and a dash of vanilla extract.
Then throw this batter into the pan and cook it like a regular pancake.
3. Go Crazy
If you’re not a sweet tooth but want to snuggle up in the hot fat of regular pancakes, one solution is to toss a few nuts on top of your pancake.
This filling works especially well with thicker American-style pancakes with cream or fluffy banana pancakes.
A mixture of chopped pecans and hazelnuts will work especially well with either option.
Or, if you want to push the boat, you can try almond flakes.
4. Turn it into a cake
The word “pancake” already contains cake, so why not make just one?
Prepare a batch of 10 pancakes and coat each layer with a “cake filling” of your choice.
If you like sweets and don’t mind ingesting a year’s worth of calories in an hour, you can add buttercream to each layer.
Or why not add Nutella before dipping the top of the “cake” with melted chocolate and chocolate chips or hundreds and thousands to decorate?
5. Make it tasty
Who said pancakes had to be for dessert?
Much of Asian cuisine involves pancakes.
For example, think of the wafer-thin duck pancakes you can order at your local Chinese restaurant.
Some countries in the region – like Vietnam – make pancakes that look like the ones you see in the UK and Europe.
But, rather than eggs, milk and wheat flour, they use coconut milk and rice flour in the batter and have fish and/or minced pork as a filling.
Known as “banh xeo,” the pancake batter requires one cup of unsweetened coconut milk, two cups of rice flour, one cup of corn flour, and four cups of water.
Some recipes also recommend adding mashed mung beans to the batter – although these can be difficult to obtain as they are usually only found in Chinese supermarkets.
You will then want to season the dough and add some sliced spring onions and a few teaspoons of ground turmeric.
For garnish, NationalWorld recommends frying ground pork and shrimp with onion, a few splashes of soy sauce and a flash of fish sauce.
They can also be made vegan quite easily by replacing the filling with jackfruit marinated in barbecue sauce, which will recreate some of the flavor and texture of the pork.
Once cooked, the finished pancakes can be served with a sweet chilli dip.
